I originally made these back in may 2011 but I am finally getting around to posting this recipe. I made these yummy peppers as a way to make ground beef more interesting. They turned out really great, I would definitely make this recipe again.I think the stuffing part is good as a dish on it's own, add some veggies, and there you go! The tough part is not eating all the meat before you get to stuff the peppers! I like trying to find new ways to make meal more interesting! what are your favorite foodie inventions?
Stuffed Peppers
Ingredients:
1 pound ground beef
3/4 cup dry rice
4 large or 6 small sweet bell peppers, tops cut off, insides cleaned out.
2/12 cups tomato sauce
1 tbs Worcestershire sauce
1/2 cup chopped onion
garlic, cloves or powdered
salt and pepper
1 tsp italian seasoning, 1 tsp paprika
1/2 tbsp cayenne powder
butter
water
Preparation:
1) Cook rice. boil peppers 2-3 minutes and then put into cold, ice water. preheat oven 350 degrees F.
2) brown the ground beef in skillet and drain grease, set aside in a separate bowl. in same pan saute the onion and garlic. add it to the ground beef. mix well. add the cooked rice spices, Worcestershire sauce and 1 cup tomato sauce. mix it all together well.
3) in a baking dish place place the peppers. stuff with the meat mixture. with remaining tomato sauce pour a little on each pepper and the rest over the bottom of the pan, you may want to add a little water to thin it out.
Bake 45mins to 1 hour until peppers are tender.
* top with cheese if you want to make it a little extra special!
