Chicken Pot Bread-Bowl

This is the recipe that I have been most excited to post. I am not a pastry lover, however I LOVE chicken pot pie; so on that date, two years ago today I came up with an alternative that I think is absolutely fantastic, for it's 2 year anniversary I am sharing it with you today! I make my own bread, it's simple easy and wonderful; and the smell of fresh baked bread is divine, so with a stroke of brilliance I created my wonderful recipe: Chicken Pot Bread-Bowl!

One of the things that I love about this is that it is quick and simple to make and it is (for the most part) made from scratch.





Chicken Pot Bread-Bowl



Ingredients:

  • 3 large chicken breasts
  • 1 cup peeled/sliced carrot 
  • 1/2 cup sliced celery
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn nibblets
  • 1/3 cup chopped onion
  • 1/3 cup butter
  • 1/4-1/3 cup flour
  • salt and pepper
  • 1 can cream of chicken soup + chicken broth to make 1 3/4 cups when mixed
  • 2/3 cups water or milk
  • garlic powder ( NOT garlic salt, they are NOT the same thing!) and Cayenne powder- add until it is a taste you like. about 1 tbsp each.
  •  Bread bowls ( see recipe)
 

Preparation:


1. After your vegetables have been prepped set them aside. boil a pot of water and boil your chicken until they are only a little pink inside. drain water and cube the chicken into small pieces.


2. Boil water in the pot (clean it first) add the chicken, carrots, celery, corn and peas. boil 15 minutes. Meanwhile In a skillet melt the butter, once it is foamy and bubbly add the onions and saute until soft and translucent. once your 15 minutes of boiling is done, strain the chicken and veggies.


3. To the skillet add the flour, salt and pepper chicken/veggie mix, soup/broth mix and your choice of 3/4 cup water or milk. mix everything well, add the garlic powder and cayenne powder and simmer until thickened. set aside.











4. fill your bread bowls and put into a 425 degree oven until bread bowls are just crispy and warm.

serve immediately.
