Soft Ginger Cookies

This is a most beloved recipe of mine and one I love to make, And really, this post is Way over due!
Ginger cookies are a Christmas time thing, and, I must admit, the photos I took for this post were taken just around that wonderful time, forgotten amidst the jumble in the camera that is my phone!

These cookies are not the traditional ginger snaps that so many out there love, and though I do like them too, my heart belongs to those soft, melt-in-your-mouth ones.

So, without further ado Here is this wonderful recipe, although perhaps I should posta bit of warning, my Boyfriend tried to make these and didn't follow it exactly, and they kind of bombed (Sorry Darlin'!), this really is one of those recipes that you have to follow exactly as they can be finicky if you don't.


Soft Ginger Cookies


Ingredients:

2 1/4 cups all purpose flour (make sure this is the right flour! The first time I tried these I accidentally grabbed multi-grain bread flour instead, lets just say you could have used these to play hockey with!)
2 tsp powdered ginger
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp salt
3/4 cup softened margarine
1 cup white sugar ( or you could try 1/2 c white sugar and 1/4 c honey)
1 egg
1 Tbsp water
1/4 c molasses
small dish of white sugar for dipping


 Preparation:

1) Preheat Oven to 350 degrees.

2) Sift together flour, ginger, baking soda, cinnamon, cloves and salt; Set aside.

3)In a large bowl or mixer, cream together the margarine, and sugar until light and fluffy. Beat in the egg and then the molasses ( if using honey or another sweet liquid you'd add it now). 

4) Gradually add in the sifted dry Mixture, mix well until dough is soft.

5) Shape dough into walnut sized balls and roll in the dish of sugar. Place them onto baking sheets and flatten slightly. sprinkle more sugar on top if you wish.

6) Bake 8-10 minutes, Allow to cool on the baking sheet for 5 minutes BEFORE removing them to a cooling rack, COOL COMPLETELY before eating, or they will fall apart and crumble. store in an airtight container.


* Try dipping these in white chocolate!
